Tricks of the Trade: Healthy Burger Night (Paleo Option)

This week is a "Tricks of the Trade" week on I Make Stuff!  I will have some special guests sharing their tricks, as well as some yummy recipes!  

 My Trick of the Trade today is a healthy burger night!  


Recipe (for a family of 6):


2 lb Ground Beef
1 Tomato, diced
1 Avocado, sliced 
1 Head Lettuce
Paleo Ranch Dressing (recipe HERE)
Shredded Cheese (omit if doing paleo version)



Make the beef into patties and season.  Grill the burger patties and set aside.  Lay lettuce on the plate and top with tomatoes and avocados.  Once the patties have cooled slice them and lay them on top of your salad.  Top with pale ranch and shredded cheese (or no cheese if you're full paleo).  YUM!



And now a word on Paleo Mayo:
I found this recipe for paleo mayo, but I didn't have any olive oil so I used coconut oil.  I wasn't sure if it would work but it totally did!  And it's delicious!  I had to make it for the paleo ranch recipe and I have to say it's totally worth the extra work.

So why go to the trouble of making paleo ranch dressing if I'm just going to top the salad with cheese anyway?  Well I'll tell you: that's just how I roll.  I want to eat a more Paleo-like diet but I'm just not ready to give up dairy completely.  Anyway, we ate this meal with corn on the cob on the side and everyone LOVED IT!  Even the baby!
